This is a night we remember well. Pro Muay Thai, temple festival style in the heart of north eat Thailand (isan) - proper gritty stuff where you could feel the tension in the air, not just from the fighters whose livelihoods depended on the win but the front row whiskey-swigging gamblers

I had pretend bets with Chef New’s dad and despite being a “farang” all bar one, I picked the winner every time 💪🏻

It’s here in Pakchong I first tried my favourite Thai street foods, Sai Krok Isan and grilled fish ball sticks. Yummy!

Pakchong is considered the gateway to the Isan region. A gateway I’m so glad I entered 😁🙏🏻
